- Washing & Peeling: Raw potatoes are loaded into a unit that uses high-pressure water and abrasive rollers to remove dirt and skins.
- Slicing: A high-speed slicer cuts potatoes into uniform slices (flat, wavy, or ridged) with adjustable thickness.
- Blanching & Starch Removal: Slices are washed to remove excess starch, then blanched in hot water to preserve natural colour and improve texture.
- Dewatering: High-frequency vibration or air-blowing systems remove surface moisture to reduce frying time and oil consumption.
- Continuous Frying: The "heart" of the line, where slices are fried at controlled temperatures (typically around 180°C) for consistent crispiness.
- De-oiling & Cooling: Excess oil is removed via vibration or centrifugal force, followed by cooling to room temperature to prevent sogginess.
- Seasoning: A rotating drum evenly coats the chips with salt or various flavors (masala, tomato, etc.).
